There are two relevant settings in the Translation Steward:

History
Here you can define whether the entire history of the translations made is to be saved for the long term or deleted after a certain period of time.
Language Order
Here you can define the language order for each licensed system. This definition of the order affects the language selection in the language dropdown in the Translations Add-on.
SAC Language
If you select a SAC system, you will see all the supported SAC languages which you can activate. The activated languages can then be selected in the Translatoin Steward workspace:
